The addition of pine nuts gives another dimension to this healthy vegetable side dish which is full of antioxidant goodness!
Ingredients (Serves 2):
Quarter of a red cabbage, core removed and finely sliced
2 tablespoons of pine nuts
1 tablespoon of raisins (optional)
Olive oil for frying
Method:
1. Stir fry the cabbage in the olive oil, ensuring it is kept moving to avoid burning, for approx 5 minutes or until tender but with some crunch.
2. Add in the pine nuts and raisins if using and stir fry for another minute or so for the flavours to mingle
Serve as a vegetable side dish
