Mixed leaves with lemon and herbs


This is very simple but livens up lettuce leaves which can taste a bit bland. Simply wash and arrange leaves of your choice; having different colours and types of leaves makes it more visually appealing but just use what you have to hand. This is oil free but you won’t miss it.

Ingredients
Mixed leaves
Handful of herbs of choice , chopped (parsley, chives and mint work well)
Juice of half a lemon
Sea salt

Method
Wash the leaves and shake off excess water. Arrange on a serving dish and add lemon juice, chopped herbs and a sprinkle of sea salt.
