This warming stew is savoury and comforting. Serve with mashed potato and vegetables for a perfect meal on a chilly night.
Ingredients (Serves 2-3)
1 can chickpeas in water (or soak and cook your own chickpeas for a cheaper and healthier version)
1 medium-large cooking onion sliced
1 large leek, cleaned a thickly sliced
1 large carrot, chopped
2 cloves garlic, finely chopped
1 stick celery, chopped
1 vegetable stock pot
Olive oil for sautéing vegetables
Approx 250ml water
1. Sauté onions, garlic and leeks for a minute or two, then add chopped celery and carrots for a further few minutes.
2. Add water and stock pot and cook until the vegetables are tender (about 20 mins)
3. Drain and rinse the chickpeas and add these to the pan
4. Warm through for a few more minutes so the chickpeas are heated
